I’m doing a bit better on snacks these days, thanks to all the good suggestions! I’m excited about the granola bars I made. My first attempt turned out pretty well.

The bad thing is, they are so good I kept eating them!!! I threw them all in the freezer and now I’m only allowed one per day. Whew. That was pretty dangerous. I hate how all the packaged granola bars and energy bars have some sort of weird soy additive in them so this is a great way to just avoid it all together. Soy messes with my thyroid so I’m not supposed to eat it everyday.

I used this recipe (go see, it has pretty pictures) but I changed a few ingredients. They still turned out yummy and the bars don’t fall apart. I subbed almond meal for the wheat germ, cut the amount of sugar in half and added 1/3 c. oat bran, used molasses and agave nectar instead of honey, doubled the salt, and used dried cranberries and figs for the fruit. Oh, I didn’t put in the butter either.

They are still pretty sweet so I’ll have to figure out how to adjust the recipe without losing the chewyness.

M had a major milestone the other day. She stayed in the play area of the store while I went shopping! I think it was the first time in her life that she stayed with someone other than me, her dad, or her grandparents. That probably sounds ridiculous to most normal people, doesn’t it? I am glad she had fun and didn’t miss me or cry. Last year I tried really hard to leave her at the YMCA but it was just so frustrating for the both of us. I was beginning to think she would never be able to go to school, but I feel much better now. Thank goodness!!

eta: I tried a different combination, this version turned out much less sweeter (but probably has more calories)

dry ingredients:
2 c. oats
1/2 c. flax meal
1/4 c. almond meal
1/2 c. sunflower seeds
1/4 c. sesame seeds
1 c. peanuts (didn’t bother to crush them this time)
1/2 c. shredded coconut, unsweetened
1 tsp. salt

mix and toast for 10 min, turn every 2-3 minutes

wet ingredients:
1/3 c. brown sugar
1/4 c. molasses
1/3 c. oat bran
1/4 c. peanut butter
3 Tbsp. water
4 Tbsp. coconut oil
2 tsp. vanilla

heat on stove, add dry ingredients and 1 c. dried fruit, press into pan and cool

  1. YUM! I’m going to make some of those. They look and sound awesome!

    I know what you mean about the store thing.. the first time N stayed there I was utterly amazed. Now that he’s in preschool I still can’t hardly wrap my head around the concept that someone else is taking care of him. It’s surreal!
